- 1 package white cake mix (regular size)
- 1 package (3 ounces) strawberry gelatin
- 3 tablespoons sugar
- 3 tablespoons all-purpose flour
- 1 cup water
- 1/2 cup canola oil
- 2 large eggs
- 1 cup finely chopped strawberries
- 1/2 cup butter, softened
- 1/2 cup crushed strawberries
- 4 1/2 to 5 4-1/2 to 5 cups confectioners’ sugar
Instructions for Mamaw’s strawberry cake recipe
Step 1: Preheat the oven to 350 degrees F. Grease the pans and line the bottom with wax or parchment paper.
Step 2: Prepare the cake mix according to instructions. Place in pans and bake for about 25 minutes or until a toothpick comes out clean. Set aside to cool completely before frosting (if you make a single layer). You can also make several small layers or one large one. Use a round or square cake pan instead of a 9″ square pan for 3 layers, if desired.
Step 3: Prepare the filling by mixing water, oil, and sugar in a small bowl. Then add flour and stir with a whisk or spoon until well-blended.
Step 4: Bring the gelatin to room temperature and mix with the canola oil and eggs using the electric mixer for about 2 minutes.
Step 5: Add strawberry gelatin mixture in with the flour mixture one tablespoon at a time. Pour into cake pans first, then pour cake batter over this layer until it is almost full.
Step 6: Bake according to directions at 350 degrees F for approximately 20 minutes or until cooked through. I usually heat a spatula under hot water and run it around the cake outside to help loosen it from the pan.
Step 7: Let cakes cool for about 1/2 hour in pans. Then turn cakes out on a wire rack to cool completely, right side up.
Step 8: Make frosting by mixing butter and crushed strawberries with a fork or mixer until blended. Add sugar 1/2 cup at a time and beat well after each addition. Put in refrigerator for approximately 30 minutes until slightly thickened. To store, cover and refrigerate any leftovers.
