Step 3: In another large bowl (or in the bowl of a stand mixer), combine vegetable oil and sugar; beat on medium speed until smooth and creamy (about 1 minute). Add eggs and vanilla, and beat for another 2 minutes.

Step 6: Bake in preheated oven for 25 – 30 minutes or until a wooden pick inserted in the center comes out clean. Let cool 1 hour before removing from pan. Serve with coconut and pecans.
