Erin French Butter Cake Recipe Ingredients:

  • 1 cup sugar
  • 3 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup buttermilk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup butter.

Instructions:

Step 1: Preheat the oven to 325 F.

Step 2: Grease and flour two round cake pans (9 x 2″) and set aside.

Step 3: In a stand mixer, beat sugar and butter until creamy. Add eggs one at a time, beating well after each addition.

Step 4: Add in vanilla and buttermilk, beating well after each addition. Sift together dry ingredients over the batter and blend well with a mixer. Divide batter evenly between two prepared cake pans.

Step 5: Bake for 25 minutes or until a toothpick inserted comes out clean. Cool in pans for 10 minutes before turning onto a wire rack to cool completely.

Step 6: To make the filling, place all ingredients into the stand mixer and beat until light and fluffy (3-5 minutes). Cover and refrigerate for at least 1 hour to set.

Step 7: To assemble, place one cake layer on a plate. Spread filling over top of the layer and top with a second cake layer. Ice cake with as much or as little icing as you desire.

Step 8: Serve and enjoy!

Note: Cake batter yields two layers, enough for a three-layer cake. More cakes can be made by repeating the steps to make additional layers.

Enjoy!!
