Ingredients:

  • 1 ¾ cup (425 mL) dried dates, pitted and chopped
  • ¼ cup / 60 ml olive oil
  • ⅓ cup (75 mL) maple syrup
  • 1 orange, zested
  • 4 large eggs separated
  • 1 tsp vanilla extract
  • ¾ cup (175 mL) boiling water
  • ½ cup (125 mL) butter, room temperature
  • ½ cup / 125 ml dark brown sugar
  • 1 ½ cup (375 mL) tapioca flour
  • ½ cup (125 mL) cocoa powder
  • 1 tsp baking powder
  • ¼ tsp (60 mL) baking soda
  • pinch salt
  • 3 Tbsp almond milk.

Preparation Method:

Step 1: Line a 9-inch (23 cm) cake pan with parchment paper and preheat the oven to 350F/180C.

Step 2: Rinse and then chop the dates into small pieces. Place chopped dates and olive oil in a small saucepan over medium heat; stir until the olive oil is absorbed. Remove from heat and let cool completely before setting aside.

Step 3: Cream butter, pumpkin, and brown sugar in an electric mixer.

Step 4: Beat in yolks one at a time until fully incorporated and no yellow streaks remain; add vanilla, orange zest, and chopped dates.

Step 5: Sift flour, cocoa powder, baking soda, and salt in a separate bowl. Add the dry ingredients to the wet ingredients in 2 additions until just combined. Stir in boiling water, then almond milk (you can add more milk if the batter is too thick).

Step 6: In a separate bowl, beat egg whites until stiff but not dry. Fold the yolk mixture into the egg white mixture in 1/2 additions, careful not to deflate the whites.

Step 7: Pour batter into the prepared cake pan; bake for 35 minutes or until the cake has risen and bounces back when pressed.

Step 8: Remove from oven and drizzle with glaze. Let the cake cool completely before removing the parchment paper.

Step 9: To make the glaze, combine confectioners’ sugar, orange juice, and maple syrup. Drizzle over the cooled cake.
